I was testing out how to add and delete items, but noticed that the item number does not recycle (example - I deleted items #s 2-5, then the next item I entered, which should have become 2, instead was labeled 6). Maybe I'm thinking about it in terms of archival labeling, but is there a way to start over the item count? I'm thinking of the Item No as the Unique Identifier for the object.

That is an Omeka ID number that is automatically generated and unique. There isn't a way to start over.
If you would like to assign a different identifier, you can add one in the "identifier" field as part of its Dublin Core metadata.
