The only ones that come bundled with Omeka are:

Plugins
* COinS
* Exhibit Builder
* Simple Pages

Themes
* Thanks, Roy (default)
* Seasons
* Berlin

Working with Dublin Core metadata is built into the core of Omeka. It includes the 15 basic terms. For the DC refinements, download the Dublin Core Extended plugin.
