I know through Omeka you can have different users, but I want to please know if a user's permissions can be restricted... so that they can only edit their own work, for instance.

The "Contributor" role only lets those users edit their own work
Got it thank you, now my issue is the fact when I invite a user, nothing pops up in the inbox or spam saying they have been invited.
Not sure if that is an issue that was fixed in the new Omeka or not. I still need to download it.

This could be an issue with the server where you are hosting Omeka that it is not sending out emails. You might want to check with the server administrator or hosting service.
