I am working now on a php script to backup omeka sites. The add-on will basically backup whatever folders you wanted to backup (I have mine backing up the archives folder) and also the mysql db. Is this something anyone would be interested in?

I think that's definitely something quite a few people would be interested in.
You might get some more response from the dev list, particularly if you've got code to share.
You could also look at the unreleased Export plugin, which does the same kind of thing but with an XML output.
