The docs reference a SASS directory, but this doesn't appear to be present in any of the three (stock) themes I have installed. What am I missing?

The "sass" directory is inside the "css" directory for most themes.
It might not be there in a packaged theme since the SASS sources are only really required for updating the checked-in CSS, so we often omit the SASS from the downloads. All the SASS is available for any version of each theme on Github, though. For example, see the Github version of Thanks, Roy v2.2's "css" directory.
