I suspect that the layout of the collections is more in the custom theme than any plugin. You might be able to find someone to help you backwards-engineer it, or you might get in touch with them and see if the designer is willing to help you with that aspect of your own theme.
It's also worth noting that they are on an older version of Omeka -- if I remember right, it's on 1.x, not the current 2.x series. That means that their code wouldn't transfer very well to current Omeka
